Maybe your computer is treating *.exe or *.dmg files as text files, so it opens them with NotePad, WordPad, or TextEdit.

When I installed Foldit on my Mac in May 2023, it put the 315.5 MB file Foldit-macos_x64.dmg in my Downloads directory.
When I clicked on this file, it told me to drag the program into the Applications folder, so I dragged the green/white Foldit ribbon icon into the Applications folder. I then saw a 593.2 MB file called Foldit in the Applications directory. My notes say:

Default seems to edit in TextEdit (rtf file).
%S is to save the file.
I switch font from Helvetica to Courier New (fixed width).
600pm click on Foldit app in Applications dir.
    Says no malicious software detected.
I say open it. See Foldit GUI.
It updates:
   downloads binary, database, resources
Then installs them.
Then restarts itself.
Login standard mode not edu mode.
Controls I check both right/mid mouse boxes,
   I check invert camera zoom.
   Anchor camera to protein.
Turn off sounds & music.
Use default band length to last used
   Not 3.5 or 2.0.

After I picked a puzzle to play, the Foldit file in Applications grew to 743.6 MB.

I still have the Foldit-macos_x64.dmg file in my Downloads directory.
If I go to Open this file now, it behaves like it did in May 2023, as described above.
If I instead do Open With using TextEdit, I see the contents of the *.dmg file,
which looks like binary code.
If I do Open With using its default (DiskImageMounter), it behaves like it did in May 2023,
as described above.
