The hope is that the Campaign mode in the client can get you up and running with using the client. The Education mode puzzles are also good if you're looking for more insights into the science behind Foldit. There's also in-game help - click the big question mark on the left or press the F1 key. (Note that if a pop-up tooltip has a small question mark symbol in the upper right corner, pressing the F1 hotkey while it's showing should take you directly to the relevant help page.)

In addition to that, the community-run Wiki is a good resource. It has more information about tools as well as details about all the Campaign and Education levels. – I'll note that clicking the title of the Campaign puzzle in the client should open up a web browser to the corresponding Wiki page.

The Foldit YouTube page also might be of help. Most of the videos relate to the various Science puzzles we have had over the years, but the tutorial speedrun could be helpful if you're stuck. (Though which tutorial levels are active have changed a bit since that was made.)

There's also the in-game Foldit chat, as well as the Foldit Discord server (the two are cross-connected by a bot). If you're looking for 1-on-1 help, that's a good place to go, though keep in mind that depending on what other people's schedules are like it may be a bit before people respond. (Discord keeps a longer history than the in-game chat, so might be better for ask-and-get-a-response-later type questions.)
