The (consumer level) Kinect has been discontinued for over 5 years now. The integration with Foldit was experimental, and (as I recall) required a special build. It wasn't ever refined enough to incorporate into the main-line Foldit release before the Kinect was end-of-lifed. Since the Kinect has been discontinued, there has not (to my knowledge) been any further work on the interface, and so the Kinect would not work with the current builds of Foldit.
