I am using Xubuntu 8.04 and I also very interested in a Foldit client for linux.
I will be proud to report you some beta bugs along with other collegues.
Don't forget to provide Foldit to some repository, it will have much more impact if it became available to download in that way.

I would also be more than happy with a native Linux client, but it was very simple to get it running with wine. If you haven't tried wine you should do it anyway, it's a very simple tool that runs many windows applications.
I'm wainting for the Linux version, I hope it will be available soon!
