I think the full screen option already exists. 
If you're on a Windows machine, look in the 
upper right corner of the Foldit client.
Mine has 3 boxes: _  [] and X.
_  minimizes Foldit, 
[] makes Foldit fill the screen, and 
X  quits Foldit.

Does this solve your problem? 
If not, please give more info
to clarify what you want.

That would be windowed mode. By full screen, they likely mean that it causes neither the taskbar nor the upper bar to appear (the same thing can be seen by clicking the F11 button in a browser for example).

Shift+G or the "Hide GUI" option under the View menu hides everything but the score box.

Hide GUI doesn't hide most floating windows, you need to do each one on its own.

For example, if you have Cookbook or Behavior open, you'll need to close them by clicking the "X" or using the hotkey (alt + c, alt + b).
