the freeze button dose does not work correctly. it freezes to much of the structure on lock and lower. I have watched videos multiple times on youtube of someone doing but mine just dose not work.
One caveat is that we've semi-recently updates the interface, so some of the older videos of the tutorials use the older interface, which might lead to confusion. (The principles of the puzzle are the same, but how you access functionality is different.)
You're correct that by default the Freeze button will freeze all of the protein. However, you can select certain segments/residues before clicking the button to only freeze those residues. There's multiple ways to select residues, but to select ranges the easiest is probably to left-click the first residue in the range, then hold down shift while clicking the last residue in the range. This should highlight the selected residues and the number of residues selected will be shown in the lower left. If you click the freeze button now, only the selected residue will be frozen.
Alternatively, there's a shortcut to freeze a particular secondary structure element. If you double-click with the right button over the particular secondary structure element, it should freeze/unfreeze those residues.
