The Foldit Wiki was written by Foldit players and is full of useful information:

has links to pages about each Campaign/Intro/Tutorial Level. Most of these pages
have links to YouTube videos as well as static images and some text to help you.
It is good to finish these Campaign Levels before trying the Beginner Puzzles and
weekly Science Puzzles.

Within the Foldit GUI, you should see a Global Chat window. If you get stuck while
playing, post questions there. Usually someone is around who can help you. You
can keep trying things while you wait for them to respond. If you are stuck on a
Campaign Level, it is often good to restart the Level, re-read any hints it gives
you, and try again. Some have very narrow paths to victory, and once you get
off those paths, they become much harder to solve.
